This is an old family recipe. I grew up on this one for Sunday lunches. Lately I've been making it again, and it's still a family and friends favorite.
3 lbs. chicken tenders (about 16)
1 egg, beaten with 1 T. milk
1/2 cup Parmesan cheese
1/4 cup flour
2 tsp. paprika
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup butter, melted
Preheat oven to 350 degrees. Spray two 9x13 pans. Dip chicken in egg and milk mixture, then in cheese-flour-spice mixture. Place each chicken piece in a prepared pan. Drizzle butter over prepared chicken. Bake for 45-50 minutes, or until chicken is lightly browned.
Serve immediately. Serves 6-8
Happy eating!
